One night only: French-Vietnamese flavours, wine and cocktails at Chupito on Monday, October 26.
Tadia Rae and chef Billy Nguyen are teaming up for another Bar Sodalite pop-up, taking over Chupito for the evening. The lineup promises interesting wines, cocktails and what’s being described as a sneaky menu Billy has been keeping in his back pocket.
Why French-Vietnamese works
French and Vietnamese cooking have a long, tangled history. Think of the baguette inside a bánh mì, or rich, buttery technique meeting fresh herbs, fish sauce and lime. It’s a pairing so natural that plenty of people grew up eating it without thinking of it as “fusion” at all.
In Vancouver, where Vietnamese families have built restaurants, bakeries and community for decades, a pop-up built around that tradition feels right at home.
